Ramsgate cocktail bar Seabird was listed alongside some of the UK’s most celebrated cocktail bars in last weekend’s Sunday Times Style magazine.
In ‘Nose to Tail drinking’ article about bartenders increasingly using meat and bones to bring ‘depth and savoury complexity to their drinks lists’, writer Victoria Brzezinski includes Seabird’s ‘Sazerquack’ cocktail, alongside drinks by renowned UK cocktail hot spots Seed Library and Bébé Bob in London, Three Horseshoes in Somerset, and the Coal Shed in Brighton.
Seabird owner Damian Williams said: “I was taught to make drinks by all-time cocktail legend Dale De Groff, and this drink is a take on his recipe for the New Orleans classic, the Sazerac. We make a confit duck seasoned with Chinese Five Spice and use the fat that is rendered during the cooking process, mixed with local aged plum brandy.”
The drink combines Seabird’s Duck Fat Rittenhouse Rye Whiskey, with Greensand Ridge Plum Brandy, sugar syrup, orange bitters, five spice bitters and a dash of absinthe in mixing glass, strained into a frozen rocks glass. Damian’s choice of garnish at Seabird is a slither of lemon zest, cut into the shape of a rubber duck.
Seabird is a bar and kitchen with a custom Hi-Fi sound system based on The Broadway at Addington Street in Ramsgate. It was recently called ‘a little star’ by Sunday Times food writer Marina O’Loughlin, after she visited in the summer.
Seabird serves food and drink all day, Wednesday to Sunday, and regularly hosts food, drink and listening events. Drinks are craft cocktails, low intervention wines, locally brewed beer, and great coffee. Food is a mix of bar snacks, small plates, and main plates from the innovative outside kitchen.
The venue has a Christmas lunch party on Sunday 15th December, with two courses for £28, and a late night Dinner Dance on New Years Eve, with tickets on sale for £75.
